English Toffee Cookie Family Recipe

Executive Chef Stephanie Klos shares a very special, beloved family recipe for these delicious English Toffee cookie bars.

Ingredients (In Order): Quantity
Butter, softened

Granulated Sugar

Egg Yolk

Vanilla Extract

Salt

Ground Cinnamon

Pecans, chopped fine

Egg White

2 cups

COOKING PROCEDURE – 

  1. In a clean mixing bowl, using a hand held mixer, cream the butter, sugar, egg yolk, and vanilla.
  2. Sift the flour, salt, and cinnamon together. Slowly add the creamed butter mixture, making sure not to beat the dough. Fold in ½ cup of chopped pecans.
  3. Press the dough into an 11”x15” cookie sheet. Lightly beat the egg white and brush over the top of the dough. Sprinkle the remaining pecans over the top of the dough.
  4. Bake in a 375 degree oven for 20 minutes, turning halfway through the bake. Remove from the oven and cut into bars while the cookie is still hot.
  5. Transfer the cooled cookies into a labeled airtight container.
