Chef Stephanie’s Oyster Dressing

In Coastal Carolina, delicious seafood stays on the menu all year long. Known for better, fresher taste in the colder months, oysters are the star of the show in this festive Oyster Dressing holiday recipe.

Yellow Onions, diced ½”

Red Bell Pepper, diced ½”

Parsley, minced

Scallions, minced

Oysters, shucked and chopped

Kosher Salt

Ground Black Pepper

Cayenne Pepper

Worcestershire Sauce

French Bread, cubed 1”

Cornbread, cubed 1”

Chicken Stock

Eggs, lightly beaten

COOKING PROCEDURE – 

  1. In a clean saucepan melt the butter, add the onions, peppers, parsley, and scallions. Sautee for 5 minutes.
  2. Add the oysters and any reserved juices to the pan, sautée another 2 minutes.
  3. Add the seasonings and Worcestershire sauce, stir until incorporated, remove from the heat and transfer to a mixing bowl.
  4. Add the bread, stock and eggs, and lightly toss until thoroughly incorporated, being careful not break up the cornbread too much.
  5. Transfer to a buttered baking dish and bake in a 350 degree oven for 45 minutes.
